Thanksgiving dinner goes wrong in one of two ways: the turkey is not thawed, or everything finishes at different times and half of it is cold. Both are timing problems, and timing is fixable with a plan. This is the schedule I would use for 2026, when Thanksgiving falls on Thursday, November 26. It is built backward from the time you want to sit down, and the free one-page version below lets you fill in your own clock times.
The Countdown: Three Weeks Out to the Day
Three weeks out (around Thursday, November 5). Settle the guest count and the menu. Decide what you are making versus what guests are bringing. Order a fresh turkey if you want one, or buy a frozen one now while the shelves are full.
Two weeks out (around November 12). Write the grocery list from the menu and buy everything that keeps: canned goods, stock, flour, sugar, spices, butter (it freezes). Check that you own a roasting pan, a meat thermometer, foil, and enough serving dishes. Borrow what you do not.
One week out (around November 19). Confirm who is coming and any food restrictions. If the turkey is frozen, work out when it has to go into the refrigerator (see the thaw table below). Clear fridge space now; a turkey and a full set of sides do not fit in a refrigerator that is already full.
Three to four days out (November 22 to 23). Start the thaw if your bird needs it. Buy fresh produce, bread, and dairy. Make cranberry sauce, which is better after a few days anyway.
Two days out (Tuesday, November 24). Make pie dough or the pies themselves. Chop onions, celery, and herbs for stuffing and gravy and store them covered in the refrigerator.
The day before (Wednesday, November 25). Bake the pies. Assemble casseroles without baking them. Set the table, pick serving dishes and label them with sticky notes so you know what goes in each. Make sure the turkey is fully thawed.
Thawing the Turkey Safely
The USDA Food Safety and Inspection Service (FSIS) says the safe ways to thaw are in the refrigerator, in cold water, or in the microwave, never on the counter. In the refrigerator, plan roughly 24 hours for every 4 to 5 pounds, so about 1 to 3 days for a 4 to 12 pound bird, 3 to 4 days for 12 to 16 pounds, 4 to 5 days for 16 to 20 pounds, and 5 to 6 days for 20 to 24 pounds. Cold water is faster, about 30 minutes per pound with the water changed every 30 minutes, but it needs your attention. The full guidance is on the USDA FSIS safe thawing page; check it against your own bird's label before you rely on my numbers.
Roasting Time by Weight
For an unstuffed turkey in a 325 degree F oven, FSIS gives approximate ranges. Treat them as a planning estimate, not a finish line:
- 8 to 12 pounds: about 2 3/4 to 3 hours
- 12 to 14 pounds: about 3 to 3 3/4 hours
- 14 to 18 pounds: about 3 3/4 to 4 1/4 hours
- 18 to 20 pounds: about 4 1/4 to 4 1/2 hours
- 20 to 24 pounds: about 4 1/2 to 5 hours
The only number that matters is temperature. USDA says turkey is safe when it reaches 165 degrees F as measured with a food thermometer in the thickest part of the breast, the innermost part of the thigh, and the innermost part of the wing. Ovens vary and birds vary, so start checking about 30 minutes before the earliest time in your range.
Day-Of Schedule, Built Backward From Dinner
Pick your dinner time first. Here is the example I use: sitting down at 4:00 pm with a 16 pound turkey, which is about 4 hours in the oven.
- 10:45 am: Oven at 325, turkey in. This leaves 45 minutes of rest and a 30 minute buffer for a bird that runs slow.
- 12:00 pm: Peel and chop potatoes and vegetables. Put the table together.
- 1:45 pm: Start any side that reheats well, such as cranberry sauce or soup.
- 2:15 pm: First temperature check. If the skin is browning too fast, tent it loosely with foil.
- 2:45 pm: Turkey out at 165 degrees F. Tent with foil and let it rest. The oven is now free.
- 3:00 pm: Casseroles and stuffing go into the oven. Make gravy from the drippings.
- 3:30 pm: Mash the potatoes, warm the rolls, finish the vegetables.
- 3:45 pm: Carve. Plate the sides.
- 4:00 pm: Sit down.
The free page has this same ladder in "dinner minus" form, so you can drop in your own dinner time and weight instead of doing the subtraction on the day.
Oven-Space Juggling
The oven is the real bottleneck, because the turkey owns it for four hours. A few ways around that:
- Use the rest period. A turkey needs 30 to 45 minutes under foil before carving, and that is when your casseroles go in. A 45 minute window is enough to heat most sides through.
- Choose sides that do not need the oven: mashed potatoes on the stove, cranberry sauce made ahead, green beans in a skillet.
- Use other appliances. A slow cooker keeps mashed potatoes or stuffing warm, and a microwave reheats a casserole in a pinch.
- Bake pies the day before. Fruit pies hold at room temperature; pumpkin, pecan and other custard pies go in the refrigerator within two hours of baking, per USDA.
- Write the oven plan down: which dish, what temperature, how long. Two minutes of writing beats a mid-afternoon argument about whose casserole goes first.
What I Would Not Skip
Buy a real thermometer. Clear the fridge a week ahead. Make the pies the day before. And when guests ask what they can bring, say something specific, like rolls or a vegetable, so you are not stuck with three desserts and no gravy.

Frequently Asked Questions
How long does a turkey take to cook?
For an unstuffed turkey at 325 degrees F, USDA FSIS gives roughly 2 3/4 to 3 hours for 8 to 12 pounds, rising to 4 1/2 to 5 hours for 20 to 24 pounds. Go by the thermometer, not the clock.
What internal temperature is a turkey safe at?
165 degrees F, measured with a food thermometer in the thickest part of the breast, the innermost part of the thigh, and the innermost part of the wing, per USDA FSIS.
When should I start thawing a frozen turkey for Thanksgiving 2026?
Thanksgiving is Thursday, November 26. In the refrigerator, allow about 24 hours per 4 to 5 pounds, so a 16 pound bird goes in around Sunday, November 22, and a 20 pound bird closer to Saturday, November 21.
